Staphylococcus aureus is a major bacterial pathogen that causes foodborne illnesses. Conventional preservatives used nowadays are synthetic chemical substances such as sodium nitrite, sodium benzoate, and potassium sorbate but they cause many side effects. There is growing consumer demand for natural preservatives to replace chemical compounds and we propose Auresine as safe, (non-cytotoxic, non-mutagenic) agent, especially that it is active at very wide ange of temperatures (even on ice).
